Steel Cut Oatmeal with Fruit:
Boil 1 quart (4 cups) of water
Add 1 cup of steel cut oats
Stir, over med/med-hi heat for 5 minutes
Reduce to low, and cook, stirring occasionally for another 25-30 minutes or so.
Add a ton of cinnamon. Serve topped with berries

Makes 4 servings, you can also make ahead and refrigerate for (most of) the week. Scoop, mush, reheat for about a minute.

Microwave Scramble
Crack an egg in a coffee mug. Whisk it up with a fork. Microwave for 30 seconds. Stir. Repeat for 10s and stir as needed.

Breakfast in less than a minute, all can go in the dishwasher. You can ALWAYS have breakfast.

Roasted cauliflower

Preheat oven to 400.

Chop up garlic. Chop up cauliflower. Coat in olive oil, salt/pepper.

Extended: Wash and yank the leaves off the cauliflower. Turn upside down and carve into the guts if the stalk (sorry, not a cook, dunno how to describe that). Separate into chunks and then chop into florets.

Toss in olive oil, salt/pepper and spread on parchment paper (or foil, whatever dude), and go for 20 min — shake it and go for another 20-ish, depending on size of florets and preferred crispy to tender ratio.

Serve as is or extra bonus: zest a lemon over the top and then squeeze the juice over them all. Foolishly delicious.

* Bonus level: pair with the Trader Joe’s Chicken shawarma thighs— add them at your toss time, on another baking sheet, lined with foil (not parchment), with a rack, they should be done in about 20 mins or so.

**If you’re really showing off: add a bagged salad. Boom. You’re Martha Stewart.

And if you wanna take it easiest: buy a bag of florets, why the hell not, the world already has a Martha Stewart. You’re the first and only You. Xox

Salad Jars
Line up 4-5 mason jars. Pour a little salad dressing in the bottom of each, then add grilled chicken and chopped vegetables. Top with salad greens. Screw on lids and store in fridge. Shake up when you’re ready to eat.

Nobody will ever convince me that potatoes are bad for you. EVER.

When all ELSE Fails: Sometimes peanut butter toast is dinner. Add a banana or apple for extra credit. Gluten free option pictured (it’s the spoon).
